Long have the rumors flown about two former Travail chefs opening their own restaurant in the North Loop. First, the (incorrect) word was that it was going to be another Travail. That was quickly corrected, leaving a new only semi-correct story in its place—that the restaurant would be opened by two former Travail chefs (true) and be named Bear Cheese, as a combination of their two nicknames, gained in the Travail kitchen, "Bear" and "Cheese" (false).
Now, as the restaurant's opening approaches, so does the full story. According to Stephanie March at Mpls.St.Paul.Magazine, the two former Travail chefs, Nick O'Leary and Tyler Shipton, will open their restaurant, Borough, on January 2 on the ground floor of the ElseWarehouse Apartments at 730 Washington Avenue. In addition to the chefs' time at Travail, where they met, O'Leary has also worked as a sous chef for Sameh Wadi (of Saffron and now World Street Kitchen) and Shipton has spent time at Porter & Frye and Bar La Grassa. The basement level will house a cocktail bar named Parlour, run by Jesse Held, formerly of Eat Street Social.
What to expect? According to March, sous vide Scotch eggs, sweet bread roulade, and potato soup with potato chips, truffles, and Champagne are among the dishes on an early menu. Service will be dinner-only, at least to start. And if you really want to get in before the January 2 opening date, there will be a preview event on December 27 and a prix fixe dinner on New Year's Eve.
