LONGFELLOW — Seems like there are just a few finishing touches left on coffee shop/restaurant Parka—a collaboration between Dogwood Coffee, Rustica Bakery, and Victory 44's Erick Harcey. According to Parka's Twitter, they've torn down the wall between the restaurant space and Forage Modern Workshop, where they will be sharing space. They've also got their signage, display shelves, and dishware, and they are hiring and training cooks and dishwashers. Opening seems imminent. [Twitter]
LONGFELLOW — After construction on the Blue Door Pub Longfellow finishes up this week, the Blue Door team will just have to pass the inspection before they can start serving up Blucys. The Longfellow location will have a similar menu to the original St. Paul location, including 16 beers on tap (14 of which are local). One big plus: the Longfellow location will be bigger, meaning (hopefully) shorter lines. It should be open by February 1, if not earlier. [EaterWire]
UPTOWN — Downtown sushi mainstay Origami will open its Uptown outpost in early February, reports Southwest Journal. The restaurant—located on the ground floor of the MoZaic building at 1352 Lagoon Ave. S.—will serve sushi, sashimi, and other menu mainstays, as well as cocktails, beer, and wine. [Southwest Journal]
