Gastrotruck Brick n' Mortar Will Open in NE This Fall

Another day, another food truck goes brick n' mortar. Popular food truck Gastrotruck has purchased a building in Northeast and begun renovating the space into a "fast casual, hyper-local" restaurant, reports The Journal Mpls. The space, which is located at 2400 University Ave. NE, will be used for both the Gastrotruck Catering Company kitchen and for a restaurant.

Renovations are focused on making the building more environmentally sustainable. For starters, they are adding vertical grow walls and a green roof to help meet Gastrotruck's goal of growing 50 percent of their food on site; the site will also recycle water runoff to use in watering the plants. Owner Catherine Eckert says she hopes to have the kitchen up and running for catering by May and to open the restaurant sometime this fall. Stephen Trojahn, the truck's executive chef, will stay on as the chef at the brick n' mortar.
