South Minneapolis burger-and-beer spot Red Cow will be opening a second location in St. Paul, reports City Pages. The burger joint will be replacing Costello's Bar and Grill, which opened in 1994. Red Cow owner Luke Shimp is still working on the paperwork, so Costello's will not be shuttering immediately (but, presumably, soon).
The St. Paul Red Cow will have a full liquor license, and is hoping to have outdoor seating. They're looking at a late spring opening.
