Burch—the new steakhouse and pizzeria from Isaac Becker, chef and co-owner of 112 Eatery and Bar la Grassa—has announced a target opening date: February 19. According to Dara Moskowitz Grumdahl at Mpls.St.Paul.Magazine, the cooks are training this week in both the upstairs steakhouse, Burch, and the separate downstairs pizzeria, Burch Pizza Bar.
Our latest photo of Burch (taken in the early afternoon today) does, in fact, show some cooks in chefs' whites milling about in the background. And compared to last week's photos, the interior looks almost finished.
The upstairs menu will include steak, of course. But, according to Grumdahl, it will also include an extensive surf-and-truf raw bar (surf: oysters, crudo; turf: tartare) and, most surprisingly, an extensive selection of Northern European dumplings, including pretzel dumplings, handmade spaetzel, semolina dumplings, and khinkali, Georgian stuffed dumplings. Downstairs, Burch Pizza will serve pizza from a central pizza oven, as well as salads and cold appetizers.
