Beer bar Republic isn't necessarily known for its food, but with the arrival of new chef Keven Kvalsten that may change. According to the Heavy Table, Kvalsten has worked in the kitchens of several local food spots, including Lurcat, Barbette, and Corner Table; he'll be changing up the Republic menu but still keeping it casual.
Menu additions will include flatbreads, a "pork and beans" dish (pork belly, pork shoulder, cannellini beans, and Bourbon bacon jam), and a dish called Ducks in a Row, featuring Wild Acre ducks. Kvalsten also plans to focus on pairing beer and food, both through special beer dinners and through dishes that use beer in their preparation.
