After less than a year as the chef at Union, Jim Christiansen has left the restaurant to open his own restaurant, Heyday, in Uptown, according to Dara Moskowitz-Grumdahl on her Mpls.St.Paul Magazine blog. Christiansen—who has cooked at Solera and Sea Change, and also did a stint at Denmark's famed restaurant Noma—helped to open Union in November of last year with a menu known for his savory bacon donut holes.
Christiansen's new venture, Heyday, will be located at the corner of 27th and Lyndale, reports Moskowitz-Grumdahl. (The former Sunnyside Up Café will house the restaurant and what is currently a laundromat will house an adjacent bar.) He has been working with Loren Zinter—former front-of-house manager of La Belle Vie—for more than three years on their restaurant concept, and they're hoping to open by December of this year.
