Downtown's Union Restaurant—known for its very recognizable retractable roof—will be opening a restaurant-within-a-restaurant this fall, reports City Pages. The middle-tier of the multi-story restaurant will be made over as Union Fish Market, with a seafood-centered menu.
This change comes a few months after Jim Christiansen left his position as Union's head chef to work on the upcoming Heyday in Uptown. Bill King, the executive chef of Kaskaid Hospitality (Union's parent company), will run Union Fish Market's kitchen. The new concept is set to open on September 17.
