Husband-and-wife team Haley and Tony Fritz are in the works to launch a grilled cheese food truck, O'Cheeze, in the Twin Cities. The truck will sell gourmet grilled cheese sandwiches that pair with specialty dipping sauces and soups. (Think ketchup aioli with a cheese curd sandwich or traditional tomato soup with a caprese salad grilled cheese.) They plan to work with local bakeries for bread and hope to use local cheeses in their sandwiches, and prices will likely range from $6-$8.
The couple—who have previous bartending serving and bar management—bought their truck last May, and they've been in the planning and recipe testing stages for the past two years. So far, they've put in about $80,000, which includes truck and food costs, equipment and logo design.
"It's like starting a new relationship," Tony Fritz said. "It's all becoming real."
