After a successful Kickstarter campaign, beloved Seward spot the Birchwood Cafe will temporarily shutter this weekend for remodeling and expansion. The construction will include a kitchen expansion, an overhaul of the refrigeration and HVAC system, and the addition of a solar rooftop array. Construction is expected to last about ten weeks, according to Joy Summers at Minnesota Monthly.
Tomorrow, the Birchwood will host a closing time celebration from 8 a.m. to 9 p.m., with free Peace coffee all day and pizza and wine specials after 5 p.m. (plus a Saturday night edition of Burgers & Beer, usually a Sunday night special). The restaurant will be closed starting on Sunday, but will be hosting a breakfast pop-up at nearby Verdant Tea starting on March 1.
