Earlier this week, news broke that St. Paul institution The Lexington will finally re-open with some new big-name owners: former Butcher & the Boar chef and co-owner Jack Riebel and Smack Shack's Josh Thoma and Kevin Fitzgerald. In a press conference yesterday, the new team shared a scant few details about their plans for the Lex.
On the menu, Riebel said they will be keeping the restaurant's famed chicken potpie, but he would not share any further plans. They will definitely be opening up the restaurant's rooftop, a move that has already been approved by the City. They'll also be adding more live music and later hours, plus a large renovation that will focus on keeping the feel of the Lex while getting everything back in working order. They plan to open in late 2014.
