All the Details on Republic's New Food Truck, Red River Kitchen, Launching This Month

The team behind beer bar and restaurant Republic has announced that they're launching a mobile kitchen/food truck, Red River Kitchen. Named after the 1850 Red River Trail, an oxcart trail spanning Winnipeg to St. Paul, the truck is slated to make its debut at the grand re-opening of the newly expanded Excelsior Brewing Company's taproom on May 24th.

Eater Minneapolis spoke with Matty O'Reilly, the owner and operator of Red River Kitchen (who also owns both locations of Republic along with 318 Cafe in Excelsior), about what to expect from the truck.

Red River Kitchen's menu will be different each time it makes an appearance, and will depend on what is fresh and seasonal. It will focus on ingredients from local purveyors including Wild Acres (turkey burgers, duck burgers, chicken sandwiches), Fisher Farms (pork shoulder and bacon), and a rotating selection of chef Kevin Kvalston's house-made sausages and brats. Expect to see Kvalston manning the truck initially, along with O'Reilly and Republic's sous chef Ricky Wilson.

Also of note: the truck won't be appearing in the lunch-time downtown rotation. Instead, it's more like a versatile kitchen-on-wheels, hitting up taprooms, beer festivals, farmers markets, and weddings. O'Reilly also plans to eventually do multi-course pop-up dinners with the truck.
