Prairie Dogs Pop Up Coming to Sawatdee Thai for 10 Days

Pop-up-around-town Prairie Dogs—known for their handcrafted sausages and unusual toppings—is popping up in a slightly more long-term way, serving up lunch and happy hour sausages at the Eden Prairie location of Thai restaurant Sawatdee on weekdays only from June 16-27 from 11 a.m. to 6 p.m.

The pop up is celebrating Sawatdee Eden Prairie's first anniversary, and includes a new hot dog, the Som Tum Dog, which is topped with green papaya salad, shredded pork, and fried shallots, and was developed specifically for the event. The menu will also include several of Prairie Dogs classic hot dogs, like the eponymous Prairie Dog (Chicago style on a poppy seed bun) and the Split Open & Melt (a Coney style dog).

Prairie Dogs typically runs single day pop-ups, at places like Zumbro Cafe, Ike's Food and Cocktails, and events around town. Back in February, they launched a Kickstarter campaign for a possible Uptown brick n' mortar, but the project was ultimately not funded.
