The rumors are true. Kim Bartmann has been working away inside the former home of Cafe Maude Loring Park to revamp the room and bring us her newest spot, The Third Bird. Bartmann's other restaurants include Tiny Diner, Pat's Tap, Barbette, and Bryant Lake Bowl.
Cafe Maude owner Kevin Sheehy is still involved as are several bold-face names from the Minneapolis restaurant scene, including Steven Brown of Tilia and, in a wine consulting role, Bill Summerville (who is in between La Belle Vie and the forthcoming Merchant). He'll collaborate with Bartmann on staffing, concept and the wine list.
As for the space, there's a "beautiful circular white ash bar held together by big brass pins and a funny and fabulous bird mural by the artist Steven Noble." The beverage menu will focus on wine, stacked with esoteric bottles and aperitifs, and a wood-fired oven will churn out simple food like whole chickens and vegetable sides.
