Hours after declaring that The Third Bird was one of our most anticipated openings of the fall season, it actually opened for business. How is that for punctual? The restaurant occupies the space that was recently home to Cafe Maude Loring Park. The room has undergone an extensive renovation, most notably that the entrance has been moved to the back alley. Leading the kitchen is Lucas Almendinger, who has cooked at Union Fish Market and W.A. Frost. As with all the restaurants run by The Third Bird's owner, Kim Bartmann, green is the theme at The Third Bird. Bartmann also owns Cafe Barbette, Bryant Lake Bowl, Pat's Tap and Red Stag. Sustainably raised ingredients are used in the kitchen and much of the menu is being prepared in a wood fire oven.
There's been an all-star group helping open the place with Bill Summerville of the forthcoming Merchant and Steven Brown of Tilia consulting. Kevin Sheehy, owner of Cafe Maude has also been involved with the project.
The Third Bird will be open Monday through Friday 11a.m. to 2 a.m. Saturday and Sunday brunch begins at 9 a.m.until bar close. There's also a happy hour featuring $2 off taps, cocktails and wine by the glass from 3 p.m. to 6 p.m. Monday through Friday.
