At the edge of Loring Park, inside the address that once held Nick & Eddie and Cafe Maude Loring Park, a new restaurant has opened. The Third Bird is the work of Kim Bartmann, Minneapolis's successful restaurateur who also owns Bryant Lake Bowl, Cafe Barbette, Pat's Tap, Red Stag, and Tiny Diner.The chef is Lucas Almendinger, a former sous chef at Tilia. Bartmann has had some good friends helping her with this project, including Tilia's chef and owner Steven Brown as well as hospitality and wine authority Bill Summerville. The two consulted on the project.
Those who will remember the space from the earlier incarnations will know how much has changed, beginning with the entrance, an unmarked door on the most charming alleyway in Minneapolis.
