Just try and get between the Travailians and a pop-up. From the short-lived Umami to fried chicken, these guys can't help themselves when it comes to an impromptu party. Today they announced that one of their own will be opening up the doors a bit earlier than the guys are usually used to for a one-day pop-up brunch.
Tony Callies, who currently cooks inside that culinary playground that is the kitchen at Travail will be hosting and preparing brunch. Callies, who trained at the prestigious Culinary Institute of Arts and has worked around town previously at UNION and the storied Town Talk Diner. So, it's safe to say he knows a thing or three about this brunch business.
Sunday, August 24, the resetaurant will be doing three seatings at 10 a.m., noon and 2 p.m. Callies will prepare a five course tasting menu featuring doughnuts, chopped salad, eggs Benedict, potatoes, fried chicken and waffles and more. You're going to want to wear your biggest pants.
