Merchant's House Beer: Flat Earth Brewing Exclusive For Gavin Kaysen

As Merchant, the most hotly anticipated Minneapolis restaurant for 2014 edges ever-nearer to opening, details are beginning to emerge about the dishes and drinks that will be served there. Gavin Kaysen, the chef and owner of Merchant and a Bloomington native has chosen the North Loop to open his first restaurant of his own after a prestigious career at Cafe Boulud and working for Daniel Boulud. Today we learn a new detail about the beer that will be served at Merchant. Kaysen has teamed with Flat Earth Brewing for an exclusive beer that is being crafted for the restaurant.

Kaysen is hoping to use local ingredients and vendors wherever possible to showcase all of the talent we have in the Twin Cities. Flat Earth's house beer is a Belgian Dubbel that will be called The Mercantile. The nose provides aromas of cherry and caramel, while the brew is dark copper in color. It has a medium-full body with flavor notes of dried fruit; cherries and raisins and finishes dry on the palate.

Merchant remains on track for a November opening.
