Red Cow Moves Into North Loop

The gourmet burger spot has announced an opening date.

This will be the third location for Luke Shimp's creative burger concept. The original Red Cow is located near the border of Minneapolis and Edina a couple of blocks off of 50th and France while his St. Paul restaurant is in the Cathedral Hill neighborhood.

The North Loop restaurant opens Tuesday February 10 at 208 1st Avenue North. Shimp assures us that the jazzy interior decor will match the hipper-than-thou neighborhood. Ian Lowther, who has also worked behind the bar at Solera, will run the cocktail program.

It's worth noting that back in May of last year Shimp predicted that this third location would open in February of 2015 and the project has come together exactly on schedule. That's almost unheard of.

Red Cow specializes in dolled up burgers of all sorts, be it beef, lamb, bison or even tuna. The full menu includes sandwiches, salads and other nosh that play well with the craft beer and cocktails on hand.
