Josh Hedquist will lead the Coup d'etat kitchen after having most recently worked closely with Stewart Woodman at Workshop, the latest concept to occupy the first floor of downtown Minneapolis' Union restaurant. Hedquist is a Minnesota native who earned his culinary degree at the Arts Institute International. He was part of the opening team at Jean-Georges Vongerichten's Chamber's Kitchen and was executive chef for Todd English at da Campo Osteria in Ft. Lauderdale.
Hedquist will take over for departing chef Nick O'Leary. O'Leary was part owner of Borough, Parlour, Marche and Coup d'etat. He and Tyler Shipton had be co-chef when Borough first opened. He has left to pursue the vague, "Other opportunities," according to a release shared by the company. This was the same reason Shipton gave when he exited the group in early December of last year.
