Cochon555 pulled into the Lowes Hotel in downtown Minneapolis with 5 heritage breed pigs, 5 chefs to prepare them (snout to tail, nothing went to waste) and plenty of bourbon and wine. The competing chefs included Thomas Boemer of Corner Table, Steven Brown of Tilia, Michael DeCamp representing La Belle Vie, Jim Christiansen of Heyday, and Gavin Kaysen of Spoon and Stable. The winning pig had been known as Violet by her family before being brought to Corner Table to be be prepared every which way but loose.
