The Herbivorous Butcher will officially open its doors this Saturday to vegans and omnivores alike. Although the brother and sister team have already garnered much attention from far and wide, we wondered what locals think about this new plant-based purveyor.
Heavy Table reports that the flavors are right on, evoking their meated twins in the best sense of the word. The pastrami got a big thumbs up for seasoning and declared nearly indistinguishable from the real thing when consumed in a sandwich. The Korean short ribs were applauded on both flavor and texture, while the porterhouse steak, served as a part of meat and eggs breakfast, was not quite a ringer for its animal-based namesake.

Over at WCCO, Jason DeRusha interviewed Aubry and Kale (no joke) Walch about their shop, then fried up some ribs for his crew to try. All seemed to agree it was a fine substitute for the occasional Meatless Monday, although "this tastes better than a McRib" may not be the rousing endorsement the Herbivorous Butcher is looking for.
