Every Saturday night there is a special late night service that chef Gavin Kaysen shares with guests inside his lauded North Loop restaurant, Spoon and Stable. The rules are simple, you must have one of the coveted seats in the bar and lounge designated to get just a few of the dishes made by the kitchen. Each week, it's a different meditation on a dish conducive to late-night munchies. Right now, the kitchen is making tacos. This week, tucked inside a home-made tortilla was a pile of duck dressed with red mole, ramp salsa, fried cheese curds, avocado and a few fresno chilies.
