New Bohemia Wurst and Bier House, the sporty sausage and brew eatery where one can score a soft pretzel the size of a small child, is slated to open its seventh, and largest restaurant on, appropriately enough, West 7th Street. The newest addition should open at the newly developed former 7 Corners Hardware location, in the next few weeks, featuring a full bar, tons of television screens and an expansive outdoor space.

New Bohemia’s concept as a “New American Craft Bier Hall” began humbly enough on East Hennepin in Northeast Minneapolis and quickly garnered a mass following, with post-work Millennials filling up the stools on the bustling corner patio. Serving nitrate-free and hormone-free sausages and an impressive list of local craft beers, the chain quickly grew to include suburban spots like Golden Valley, Eagan and Roseville. The is also a food truck floating around the streets of the metro year round.

The menu has a distinct point of view, focusing mostly on those sausages with brave offerings like rattlesnake and wild boar. Less adventurous carnivores can opt for a brat infused with Surly’s Fiery Hell brew or a chicken and fuji apple mix while even vegans can get in on the game with a couple of offerings from Herbivorous Butcher. The menu includes a few burgers and apps for good measure, but if you’re watching your calorie intake, keep walking. Even the one lonely salad on the menu is loaded with bacon and eggs, the way the Czech gods intended.

New Bohemia is expected to open in early 2017 on the corner of Kellogg Boulevard and West Seventh Street in St. Paul.
