Cold weather may be encroaching, but ice cream news is still breaking in Minneapolis, as new Thai-style rolled ice creamery Loulou Sweet & Savory is opening this weekend in Uptown.
Loulou is moving into the Elan Uptown Apartment complex on S Emerson Avenue, and will throw open its doors this Saturday (November 18) at noon. The focus is rolled ice cream: where a liquid ice cream base is poured onto a freezing griddle-like surface. It freezes quickly, toppings are added, then it’s rolled up with a spatula and served in a cup. Loulou’s team have previously created matcha, ‘smores, and choco-nut butter ice cream bases
Beyond ice cream, the parlor will also do espresso-based coffee, and will expand in future to offer cold brew (and its nitro cousin) and New Orleans-style beignets (think deep-fried chou pastry).
This isn’t Loulou’s first outing — the team also own a bright pink trailer, which has been popping up at block parties and beyond for several months now.

It has been quite a year for ice cream rolling in the Twin Cities: St. Paul welcomed two purveyors of the Thai import back in August; it also found a place at the Minnesota State Fair courtesy of longtime cream freezers Rainbow Ice Cream.
