In a Facebook Live video posted on his official page, Andrew Zimmern has nothing but raves for Bellecour. The local chef turned international celebrity and award-winning host of Bizarre Foods shares the first raw footage of the new restaurant from fellow celebrity chef, Gavin Kaysen. The two are close, with mingling businesses including the AZ Canteen stand at the new Vikings stadium.
Bellecour is the second restaurant from Kaysen, a James Beard Award winning chef. His first was North Loop Minneapolis’ Spoon and Stable, which opened in November of 2014. Bellecour will be a French bistro for the neighborhood on Lake Street in downtown Wayzata.

The location was formerly a little seafood eatery with remarkably low ceilings. From the video, it’s obvious the space has undergone a remarkable transformation, with exposed beams, streams of sunlight and a wide open space. When guests enter they can either walk into the bakery, domain of pastry chef extraordinaire Diane Yang or into the dining room. The bakery will open every morning with fresh croissants and other baked goods that can either be eaten at the one table or taken to go.

To the right of the dining room is a long bar with a few seats where Robb Jones and his team will craft cocktails. There are 90 seats in the dining room and at the center is a cool wine case where new-to-the-team Nicolas Giraud will pull interesting bottles to share with guests.

We also get a glimpse of a gleaming, large kitchen and a pretty floral mural in the dining room. There’s an outdoor terrace, but the video was taken at night and AZ was apparently locked inside. We’ll trust him that it’s out there.

In the video, Zimmern predicts that Bellecour will be amongst the James Beard Awards nominees for best new restaurant. (And Zim knows the awards, these top honors for food. He’s hosting the media awards portion of the event in Chicago this year.) He also refers to Kaysen as “Gav,” which is kind of adorable.
Bellecour is on track to open later this month.

Behind the scenes first look ....Bellecour in Wayzata MN is going to win the JBFA for best new restaurant in 2018. Mark my words. This place is stunning, comfortable, accessible and the food that I've tasted so far is beyond delicious. Gavin Kaysen has nailed it. So proud of my friend for making his second restaurant an even more epic statement than the extraordinary Spoon & Stable.
