Restaurant owner Tim Niver, chef Adam Eaton and front-of-house whiz Laurel Elm have been looking to land a location for their deli plans as far back as 2016. Yesterday, the three, who also own and operate Lowertown’s Saint Dinette, confirmed that bagels are coming to Uptown. The unnamed deli will open in the former Spill the Wine/Tinto location on the corner of Bryant Avenue South and Lake Street.
Mpls./St. Paul Magazine says the planned menu will include bagels, smoked meats, a variety of sandwiches as well as a full bar.
Eaton, Elm and Niver first worked together at the now defunct Strip Club before opened Saint Dinette along with Strip Club’s co-owner JD Fratzke. Saint Dinette has become a go-to spot for burgers, bologna sandwiches, top shelf cocktails and some of the finest, casual service in the Twin Cities.
For some time, Eaton has had his bagels on the brunch menu and has long talked about his love of cooking the food from his Jewish heritage.
The is the second hoped for location, after an earlier spot fell through. Tinto closed last spring and has re-located to a new South Minneapolis address.
If things go according to plan, this deli will be serving some time in April.
