Mystery Pizza Stand at Keg & Case Has a Surprising Chef Behind It

Patisserie 46’s chef/owner will open MN Slice at Keg & Case tomorrow

John Kraus, the world-renowned master of pastry and bread behind Patisserie 46 and Rose Street Patisserie is opening MN Slice, a pizza stand inside the new Keg & Case Thursday October 11. The Pioneer Press reports that Kraus had been talking to the new food hall’s founding partner Dean Pearlman about what would be the final stall inside the revitalized West 7th Schmidt Brewery when an idea struck. He thought the last restaurant to join the barbecue, wood-fire fine dining, doughnuts, coffee, mushrooms and more inside the building should be either pizza or tacos.

Kraus knows bread and local ingredients, he thought, why not try his hand at pizza? MN Slice will build on top of a sourdough crust with large cheese and pepperoni slices always available. Other flavors will rotate around Minnesota ingredients and flavors, like a tot hot dish flavor with mushrooms from nearby stand Forest to Fork or K’nack sausages on a pizza called the “Meat Raffle.”

Pizza will cost between $6 and $10 and be open Monday though Thursday from 10 am to 8 pm, Friday and Saturday from 10 am to 10 pm and Sunday from 10 am to 6 pm.
