The deli project from the Saint Dinette team finally has a name: Maven. Today, owner Tim Niver said of the restaurant via Twitter, “It’ll act like a deli but won’t adhere to traditional deli norms...more variety and a mix of traditional American, Middle Eastern and Eastern European foods. Bagels, raw bar, sandwiches, roasted meat and fish, dumplings, full bar, etc.” That’s right, a full bar. The restaurant is located on the corner of Bryant Avenue South and Lake Street in the former Tinto location (before that, it was Spill the Wine.)
Both Niver and Eaton have confirmed that Maven aims to open mid-June.
Tim Niver, chef Adam Eaton and General Manager Laurel Elm first worked together at the now-shuttered Strip Club Meat and Fish. Eaton and Elm came to the more casual spot from the fine dining legend, La Belle Vie. The team opened Lowertown’s fancy burger destination, Saint Dinette in 2015. During brunch and through some cooking classes, Eaton began to explore the culinary roots of his Jewish heritage and created a cult-following for his brunch bagels.

Maven will serve breakfast, lunch, dinner and offer carry out, plus there will be a full bar. The bar matters because Niver has been a pied piper of sorts for next level cocktails in the Twin Cities. It was his Town Talk Diner that is largely credited with creating what is generally known as the craft cocktail scene in the Twin Cities.
