Has anything more French ever existed? Well, yes, the country of France for one thing, but Trapeze Bubbles & Toasts, a new sparkling wine bar joined to Barbette in Uptown is maybe in the top 100. It’s a project that restaurant owner Kim Bartmann first teased in April of 2016.
With over 85 selections of sparkling wines on the list curated by Jill Mott, charcuterie boards galore crafted by Barbette chef Jessica Cak, and just 22 seats speckled around a standing-only bar, Trapeze has flooded Uptown with European flare complete with bold murals and soft lighting. It’ll be open Thursdays through Saturdays from 5 p.m. to midnight and won’t take reservations, so come early (although, it is available for private parties).
There are wine selections at all costs as well as rare bottles. Just don’t try to order any of Barbette’s classic fries—there won’t be any crossover between the menus with Trapeze focusing on smaller, cold plates instead. There will, however, be a relief from bubbles in the form of three bubbly and three non-bubbly cocktails on rotation.
