Elegant Italian Opens on Grand Avenue August 14

Hyacinth’s reservation line opens July 27

The newest restaurant from a New York transplant is almost ready at 790 Grand Avenue in Saint Paul. Hyacinth will open its reservation line one week from today, on Friday July 27. The highly anticipated little spot from chef Rikki Giambruno, chef de cuisine Paul Baker and general manager Beth Johnson opens at 5 pm August 14.

Get ready by checking out the work-in-progress menu on the restaurant’s website. Giambruno relocated from New York, where he ran the kitchen at Franny’s in Brooklyn, to his home state of Minnesota with the plan to open a small neighborhood restaurant. Hyacinth takes the place of the original Golden Fig (the gourmet grocer moved into an expanded space next door.) The location had never been a restaurant before, but will soon have 38 seats.

Giambruno named Hyacinth after the street he grew up on. Once open, it will serve dinner 5 to 10 pm Tuesday through Saturday.
