Over a month after learning that burgeoning fried chicken chain Revival was aiming for a third location inside Keg & Case, the restaurant is finally revealing details on its planned menu. It’s true, there will be no fried chicken. The restaurant from chef Thomas Boemer and Nick Rancone made a name for its towers of crispy bird, but its second location in St. Paul started nudging into smoked meat territory. The new incarnation, part of the revitalized Schmidt Brewery on West 7th, will focus primarily on smoking things and leave the fryers out.
Almost everything will be coming out of a massive new smoker: slab bacon, ham, beef, oysters, jackfruit, plantains and more. Smoked things will be available by the pound and in sandwich form along with some sides. There will also be a breakfast menu.
The restaurant will be located on the other side of the complex from the fine dining, hearth-cooking restaurant In Bloom that these two are also working on creating.
The new Revival is expected to open with the rest of the Keg & Case food hall some time in Mid-September.
