West 7th’s popular taco and tequila restaurant is opening a second location in the Minneapolis suburb of Edina. Chef/owners Tyge Nelson and Stephan Hesse first opened Pajarito in the winter of 2016. Since then, the restaurant has built a stellar reputation on tacos and tortas.
Now, the duo are turning their sites westward to the former Tejas location in Edina. The 50th and France restaurant location was also home to Mozz Mia and Moderna Kouzina for a hot minute.
The dining room only needs some light refreshing, the kitchen had been extensively remodeled by previous tenants. On the menu, food will be much the same as in St. Paul, still making great use of wood-fire.
Nelson and Hesse are familiar names in many chef circles, having cooked at an assortment of notable restaurants around town including Chino Latino, Libertine, La Belle Vie, Barrio, the St. Paul Hotel, and more. Pajarito was their first time as owners, running their own kitchen. The restaurant has since become part of the trend of opening chef-driven eateries along St. Paul’s West 7th Street and essential Twin Cities dining.
