This summer, Provision Community Restaurant will bring a pay-what-you-can model to Minneapolis in the former Salty Tart location. Provision owner Anna Wienke took over the location this past week.
With communal seating, rotating menus, and meals served family-style by volunteers from the community, Provision will center around the One World Every Body Eats (OWEE) model.
The cafe will join a growing number of restaurants turning towards a “give-as-you-can” approach in the hopes of addressing food insecurity and waste in their communities— including Seward’s Soup For You Cafe and Cafe Racer’s Breaking Bread lunches.
Wienke plans to foster food industry growth with a shared commercial kitchen space, as well.
Provision intends to open by July, with a self-serve cafe on Mondays and Tuesdays, and dinner service offered Wednesday through Fridays. Hours and seating information are available via the Provision Community website.
