New Luxury Hotel Taps Minneapolis’ Top Fine Dining Chef to Run Its Restaurants

Gavin Kaysen, the James Beard Award winning chef and owner of Spoon & Stable, Bellecour Bakery, and Demi will open a fine dining and a casual restaurant in conjunction with the new Four Seasons hotel taking shape in downtown Minneapolis. The hotel property owners announced the partnership today saying that Kaysen will oversee all aspects of the restaurant and bar on the lower level of the under construction hotel on Nicollet Mall and Washington Avenue.

The hotel and restaurants are expected to open in early 2022. There will be another rooftop restaurant and pool that will be overseen solely by Four Seasons. No word of names or style of cuisine have been released yet.

The hotel is part of the massive new RBC Gateway, a new 34-story building under development.

The announcement comes amid years of hardship for downtown Minneapolis, a once bustling part of town that is now empty of most workers and daytime foot traffic. The area had been beleaguered by reports of crime even before the pandemic. The plans strike a note of optimism after a rough year for the city.
