From its origins in the Jalisco region of Mexico to its evolution in Tijuana, the popularity of birria is spreading around the country like crazy. One may argue that this has become one of the hottest food trends in major cities largely as a result of social media. Finally, the birria movement seems to be hitting the Twin Cities — even showing up at some unlikely places — and we are here for it.

For those who may not know exactly what birria is, here’s a quick lesson on the dish in its various forms. First there’s birria de caldo, a meaty soup traditionally served for celebratory occasions in Mexico comprised of an adobo chile-based broth and made with goat, birria de chivo. However, as most cuisines inevitably do, the dish has evolved in a number of ways including quesabirria, a Tijuana-rooted variant where slow cooked beef is loaded into broth-dipped tortillas, folded and fried with cheese on a flat top grill, and served with a side of the broth (consomé) for dipping. Raw diced onion and finely chopped cilantro adorn the shredded meat. It’s the comfort food that you didn’t know you needed until now.

From family-owned authentic taquerias to accoladed chef restaurants, here are 10 places to find birria in the Twin Cities. Many of the dishes below are specials, so be sure to check online menus and social media for availability.

The Linden hills neighborhood restaurant and cafe recently added a surprise on its takeout menu. Found under the entree section is the birria tacos special which boasts Oaxaca cheese, slow roasted braised brisket, and Mexican-style adobo broth. This occasional addition to the menu comes from Tilia’s sous chef Roberto who created this special.

Chef Jorge Guzmán’s Kingfield spot recently offered a special on its takeout menu for a birria beef torta and due to its popularity is now a menu regular. The birria brisket sandwich is rich with Chihuahua cheese, cilantro, onions, and salsa picante on a toasted roll with a side of caldo de chipotle (spicy broth). Order online and order early (for takeout only) as this torta has been selling out quickly.

3. Nixta Tortilleria & Mexican Takeout

Located in Northeast, chef Gustavo Romero and team are making tortillas using nixtamalization, a process of soaking heirloom Mexican corn in an alkaline solution to loosen the outer hull. The multicolored corn tortillas are being used to make a Saturday-only rotating special quesa birria tacos, what they’re calling Mexican French dip, with Oaxaca cheese, beef birria, and birria caldo for dipping.

They have an extensive menu with lots of options but if it’s quesabirria you’re after, order the taco dorado birria con queso and be sure to get one of their many agua frescas. Order five of the fried tacos and you’ll get your side of consomé free.

St. Anthony’s Village Pub has a long-running non-menu special that has stuck around due to its popularity, thanks largely to social media. The pub’s take on birria tacos is a little less traditional with melted jack cheese on corn tortillas, slow cooked beef, and lots of chopped onions and cilantro with a side of broth.
