As the sunlight finally hits the Twin Cities, there’s an interesting new crop popping up behind bars all over town. Some of the hottest new cocktail spots (and a few that were ahead of the curve) are sporting twirling machines full of icy refreshments mixed with a hearty selection of booze. These spiked slush-drinks are taking local cocktail culture to the next level with carefully layered flavors, sophisticated selections, and a welcome shot of fun inside the oh-so-serious new world of cocktails.

These are the best spots to bask in the sun and indulge in a little alcoholic brain freeze.

The newly expanded Pig Ate My Pizza in downtown Robinsdale has two frozen slushies on tap behind the bar. The cocktails are high-end flavors in a delightfully low-rent vehicle. Like everything about PAMP, they defy expectation and deliver on fun flavors. Try the purple aviation spin out on the “porch,” where the garage door windows roll back.

This twisted mini-golf bonanza with the kicky country club vibe serves a delightful prickly pear margarita dosed with tequila straight from the rotating slushie machine behind the bar. Take a twirl on the rotating patio-come-Ferris Wheel outside, while surveying the little people down below.

Hai Hai is perfect for patio basking on a sun filled day, or hiding out from persistent cool temps in a tropical room. The restaurant, owned by James Beard nominated chef Christina Nguyen and cocktail-making maverick Birk Stefan Grudem serves two varieties of spiked slushie inside this Vietnamese eatery. Try the Lychee Keen with gin, orange crema, cocchi americano, lychee and a spritz of absinthe.

Guava and mescal play together so nicely, it was nice of Northeast’s vibrant taco spot to put the two flavors together in a slushie format. Sip on a mix of guava, kombucha, and a zing of lemon mixed with smoky mescal out on the patio overlooking the cobblestone street.
