The glory of a great breakfast sandwich is the simplicity contained within. The egg must have just enough yolk to soak deep into the bread, but not be so runny that your shirt wears it as a breakfast badge for the rest of the day. Speaking of bread, there has to be a bit of heft, a satisfying crunch and all the better if there's a swipe of something lush and tangy. After that, it's dealer's choice. Want it zesty, or veggie crunchy? The meat drawer is at your disposal and the seasoning can dance from mild to zesty.

If you've never tried a bit of harissa, the North African spicy sauce, with eggs, than you owe it to yourself to get to the market right now. Sriracha is so six years ago, anyway. 112 Eatery has had this baby on the menu from day one and it was love at first bite. Smokey bacon, runny yolk and the simple, white bread is pure comfort.

Chef Landon Schoenefeld's (pictured here behind the counter) diner on Nicollet Avenue does all the early day foods just right: enormous pancakes? Check. (Some with kimchi - which only sounds weird until you eat it.) Pastrami so good it'll make you cry and a cinnamon roll just like mama never made.Plus, the breakfast sandwich of the gods. Scrambled eggs, just the right texture: not too soft, not too hard piled on an English muffin with your choice of meat.

Icehouse's brunch service includes another pastrami cradling breakfast sandwich worthy of adoration. It makes sense that it's a sibling of the perfect pastrami sammy at Be'wiched, the two restaurants share the chef/owner. This one is also good enough to stand on its own with the addition of some seriously spicy chilis and a draping of Swiss Cheese.
