Food lowers and rises depending on the height of the crackling flames. Start with the grilled oysters before diving into the whole menu. An entree of pollo a la lena, is a dish blessed in flame, spiced with guajillo, and served alongside charred vegetables.

At Ann Kim’s wildly popular Northeast restaurant, a wood-fired oven roars at the center of the circular bar in the middle and another fire-fueled grill cooks at the back. Order the smoky, spicy-sweet Amatriciana with perfectly crisped bits of guanciale, and don’t skip the sides: charred eggplant, grilled mushrooms confited with miso butter, slow-roasted Japanese sweet potatoes topped with charred scallion crème fraîche.
